My Pit Boss is 3 years old and lately just won't hold the correct temp like it used to. If I want to cook at 300 I have to set it much higher, otherwise it stays around 250-270. Sometimes I have to set it to Hi just to get it up to 300, then it might take off and run up to 390. Suppose the temp probe needs replaced?

I totally clean everything after each cook

My thinking exactly. Take the cover off and clean the sensor!
