Here in SC, Sam's Club has USDA PRIME Brisket at prices other store charge for USDA CHOICE.
When it comes to Pork Butts I watch for sales and stock up. Sam's usually has good Butts and ribs. I always look for largest ones with the most Money Meat.
I avoid Costco, they debone their butts and use mechanical tenderizers which perforate the meats to tenderize but that introduces bacteria deep into the meat. When you are smoking your hunk of meat it is usually a low and slow process which produces a tenderness that high heat methods can not give you.
