Mine does drop in temperature after I move it up. I also have problems with mine getting to the temperature I set it for when it’s below about 60 degrees outside. I have replaced the temperature probe and the controller but it’s still not able to get to the set temp when it’s cooler outside. I have given up on trying to have it work as it should and have purchased a small oven thermometer and set it on the grate beside the food. I watch it and adjust the smoker temp to what I need it to be to get to the correct temp inside the cook area. It’s 50 degrees here today and I just moved the temp up from 300 to 330 to try and reach 250 at the food. It was at 225 when set to 300 so I had to move it up. It’s pretty frustrating that with today’s technology pit boss couldn’t make a more steady smoker in various temperatures. I understand it being off a little when it’s 20 degrees or so but I’m walking around in shorts when it’s 50. And I part of my regular cleaning focuses on the temp probe in the smoke area, so it’s nothing related to that. About 60 degrees outside temperature it seems to be rock steady.
