I'm smoking some beef ribs at 225 degrees. I just glanced at my smoker and saw that the temp was 252.

The temp was settled. I just took another look and now it's at 275. I've never cleaned the sensor...the grill is new and this is the third time I've used it. I don't even know where the sensor is.I let the temperature settle in before putting anything on it
