Temperature rise and fall

You didn’t mention which model you have, but I had that problem with my Lexington. The recommendation I was told was when heating it up, heat it up to about 100 degrees past the desired temp and let it drift back down.

The other thing I was wondering is if your system has the “P” setting. When you first start the grill, you might see “P4”. If the ”P” setting is too high, the time between feeds increases and if it is set too high, it could make the flame go out. Check out the following:

Changing the “P” setting to “P3” should help prevent the fire stall, but will also raise the temperature a bit. Question: Have you cleaned your temperature probe?

No, that's not normal. If you set the control panel to 250⁰ and the grill temperature rises to 350⁰ to 375⁰, it indicates a significant temperature variance, which may require maintenance or calibration of your grill's temperature control system.
