I follow careful step-by-step instructions look at YouTube videos and now I’ve ruined my second brisket this pit boss will not hold temperature it’s all over the place I’ve tried everything I think the controller is bad it just doesn’t matter what I set it to the temperature just goes up and down the scale and now I’ve ruined my second brisket. i’m done with this unit it going into cold storage forever.
 
Or hear me out I'm going to throw out a crazy idea,call customer support and they'll send you a new controller or help figure out what's going on.
lol i’m just frustrated i’m going to do that. I called them before and they had me adjust the smoke stack, change the pellets, clean the temperature probe and then I would try it again and it still would not work correctly. there is no error messages it just seems like it’s not controlling the temperature at all. i’m going to try and call them and just insist that they send me a new controller. I don’t know what else to do.
 
My KC did the same thing and I tried changing controller and many other parts with no success. Seems to be a common problem. Fixed mine by returning it for another KC and works great.
 
no but i just ordered a new controller with the wi-fi app. i’m thinking if the controller is bad I’ll get a new controller out of this and the Wi-Fi app which would be real handy

try getting a 4 probe wireless kit and put probes in different areas of the grill. There will almost always be hot and cold spots. Find the spot on your grill that is closest to the desired set temp reader you are using to control the temp.

It took me several cooks to get it to do what I wanted. I definitely have to crank it up to about 400 to get it up to temps. Once I get it to temps I do still need monitor it. It will take several cooks to get to where you can set and forget it. Just like any other grill you have to learn yours.
 
That's the way to overcome it. When I cook on my Austin XL I put a wireless probe to monitor the temp. It connects to my phone and I can set alarms on it. $40 on Amazon. I don't care what temp the smoker is set on, I set it where I need to to show the temp I want on my thermometer. Last week I set the Austin to 250 and my temp probe held 230 right next to the meat. I set it to alert me if it went above 300 or below 200 in case of a fire or burn out. Piece of cake.

When you say you ruined it
What pellets are you using makes a huge difference
Was the brisket choice prime or select
Is your pits smoke stack cap open or closed I keep mine open
 
I don’t think it’s the pellets because I’ve had different pellets and different brands in there before and it always does the same thing. as for select or prime cut I’m honestly not sure but this is the second brisket I’ve had that didn’t turn out and the first one I did was a really good cut of meat and very expensive
