Two pork butts

Going to (try to) smoke two pork butts in the morning. Both are 8 pounders.

Going on the son-in-laws barrel style grill. Got my charcoal snake set up, will light it at ~5:30 am, butts on at 6.

Am slightly nervous with the temp going to be 25° in the morning, but we will see. He didnt have any chips, but I brought some PB Competition Blend pellets to use on the charcoal snake for smoke. Fingers crossed.

Rubbed the butts with mustard and then Kinders Hickory Brown Sugar Rub. They're in the fridge on a tray waiting for the morning.

Roll smoke!

I find smoking pork butts nearly a bulletproof activity.




How long do you expect your snake to last? Have you done this before on this barrel?
When the SIL first got this grill in June, I made this snake, except continued it to the back and made it wider at the finish end.

This one burned for about 6 hours and held 225° ish by the candy thermometer in the stack. That was no water pan, no meat, just a burn.

The loin held the temp around 180° and it did get to 145°.

The current snake is double the length of this one.

Butts have been on for an hour ish. Internal temps still in the mid 40s I had them on the shelf before I put them on and they got colder than in the fridge (like 34°). Should've kept them in the house until they went on.

Gonna let it roll, I can add charcoal to bump the heat, and finish them in the oven if they don't cooperate. Stay tuned:

Butt temps are 96 and 76, just shy of 3 hours in, looks like gonna need some extra heat before i'm through. The snake is doing good.

Exhaust temp is at 220°.
