Very long time to reach set temperature.

Ok, my startup procedure has been to turn it on (defaults to "S" (180)), I wait till it gets to the 180 and then set it to 350.
That is how I always did it with my old controller and seemed to be fine and would get to the 350 within 15 minutes give or take.

So based on that manual excerpt above if I want to cook at 350 I should set it to like 400 right after turning it on then when it gets there drop it down to 350?

Worth a look. This was the issue on my Laredo 1000:

I couldn’t figure out why my old 820D was kicking my brand new Laredo 1000’s arse on heating up and maintaining heat, until I watched that video. There most certainly is a gap in the area mentioned, because instead of being rounded like on my 820D (to match the shape of the tray), it’s flat, which allows the fan to blow the air from the fire pot on the temp probe! It won’t call for pellets as often, and as a result, it takes forever to heat up and maintain temperature. I tested this theory by putting some folded up aluminum foil between the probe and that gap, and the grill started working properly! Ordered this part right away. Hopefully Pitboss realizes they have a design flaw on these newer grills, and takes care of the customers. People shouldn’t have to order 3rd party parts to make their grill behave properly.

The 850 is already built like that with the rounded plate, and as I said when the old controller was in it worked as I described without issue. All this has only started since I put in the new controller they sent me to get the Wi-Fi to work.

well, this has been just a plain nightmare. Tried setting it to 400 with the intention to drop it down to 350 when it got to 400.
Several problems.
1. It will never get to 400, best temp after 1hr has been 360.
2. Temp fluctuates constantly which if the temp prob is set prematurely ends the cook due to it jumping from approximately 6 degrees every second, so it will jump from 300 to 306 and then back to 300 etc.
3. Temp probe reading does the same jumping back and forth.
 
I have a similar situation with my Pro Series 1100. The grill has functioned perfectly since I purchased it last year. Now, for the past month or so, if I set the grill to 450, it will get to no more than 200, and stay that way (or even drop into the 180s). I have discovered that, after the temp has not moved off the 200 mark for 30 or more minutes, if I then set the temp to 450 a second time, the grill will finally start to climb to the correct temperature. Anyone run into this and might know the fix?
