It really doesn't get hot enough, definitely not going to sear anything. The biggest point to share here is that you better have it incredibly clean if you are going to push it to 300+. If there is any grease on your drip guard or water pan it will catch fire much easier and more quickly that a normal grill due to the airflow. Next thing you know the build up on the walls will catch and your pooping your pants. Fires in these units are terrifying given how big the cabinet is and how easy they are to backflow to that massive pellet hopper.
