Proteins get most of the glory in the BBQ world, obviously. But let’s talk about the Robin to the BBQ Batman. Your favorite side dishes. I’ve started doing a “corn rib” elote that has been a huge hit as of late. Cut the cob into 1/8ths and half it. Sprinkle your favorite season on it. Give it a quick fry in some oil and some smoke time. Crema, mayo, like juice and your seasoning of choice and you have bbq elote corn ribs.
