🔥 What's Smoking/Cooking on your Pit Boss?

Tonight did 4 Dolly Parton sized chicken breasts. Used the temp probes. The right end seems a bit hotter.

Ran to 165 on p0 (was at 220ish)with apple. Olive oil to bind cayenne, cummin,onion and garlic powder.

Better than the ribs.
Been looking for breasts like that. Do you shop anywhere special?
 
Just pulled 2 1 lb "burgers" off. Gonna break them up for chili tonight.
So got around to whipping up a pot of chili tonight. The wife thought the smoked burger was great in it.

I got a pack of 6 gun chili mixins . Has to try it for the name. Interesting stuff. Toss in the 2 brown pacs. It has a heat pack I didn't crack for heat to taste.. It even had a pack of flour to thicken if needed. I wanted to see how it tasted minus the heat to see if I wanted more.

Interesting stuff, it's crazy spicy but doesn't carry a lot of heat if that makes sense. Gotta try it again with heat this time
 
Got my Portable Pitboss loaded up with18lbs of pork butt this morning! Just fits! This is my favorite smoker! So much smoke even at 400 degs! Amazing!! Cooking hot and fast at 400 degs for 4 hours and the. 375 in the oven for 2.5 and rest for 2 hours. This is how they look after 2hours.

I have the same smoker. Never would I have thought I could fit 18lbs of anything in it. Good to know
 
3 anda half hours in. P0 P1 floating temp between 230 and 215.
IT at 130. Back to firewood...
7 hours just hit 165. Dropped it into its drip pan and covered it. Dialed up to 280 and its climbing.
ETA When I forked it off the rack it was awfully tender. Gonna be a tough wait.

Two nine pounders. I squeeze them with twine to make them more vertical.

Made twenty four 1/2 pound vacuum sealed bags. We freeze them and pull them out for quick meals!
