Been awhile. Been home a couple of weeks from vacation to Italy and Greece on a cruise
My bride decided to cut it in half then cut the other piece in half while I was in my mower shop because she couldn’t get it in a bag lol
I told her I was going to smoke the entire brisket then slice and portion
She’s a mess

Locally Publix has $2.99/lb brisket today. Stephanie picked up a 17 pounder for me! I haven't smoked a brisket for a good while. Maybe tomorrow!

Just put my 17lb brisket in the cambro for holding! That happened an hour ago.
That $2.99 / lb Publix USDA Choice brisket trimmed up beautifully.
After trim I seasoned with Salt, Pepper, turbinado sugar, and Montreal Seaoning. All seasonings were same size Grind (sieves).
4hrs @ 185f
8.5hrs @ 245f
I crutched at 152f with foil prior to anybstall indication.
Finished at 201f verified with temp probe feel, felt like butter!

I have it resting so I haven't put the blade to it yet!

I went out to smoker about 10:30pm to crutch this brisket. I wrapped in foil instead of paper. I added half cup of beef stock per usual.
Brisket was probe tender this morning so I placed it in my Cambro.
At about 8:30 after coffee I wanted a taster. To my surprise I found somehow the foil had sprouted a leak, I lost all that good jus. Looking back at temp graph I guess this happened around 2am.
Well I reduced some more beef stock and rewrapped the brisket.
Apparently the foiled negated the stall. Meat was good and juicy, I sure missed that good jus.
