Doing the burn in with lump charcoal. It's been rock solid at 250 for a few hours now. It should stay there the whole time. Im really impressed with how steady the temp is!

It's almost a jacked up meatloaf. I used cubes of my smoked cheddar that I made mixed in the loaf. It smells fantastic!

Brushed with Sticky fingers sauce fir the last 10 minutes. It's done 2 hours total.
