First time cold smoking cheese

So for us MN, MI, WI folks, if its in the 40's would we even need the ice trays? I have always wanted to cold smoke and this year I will.

I can't speak for results yet since mine needs to rest for at least another week, but I don't think I would have needed an ice tray and I did it in 55-60 degree weather in WI. I also didn't put it underneath the cheese like ANT0407. I just had it next to my smoke tube for no good reason at all. I thought it wouldn't hurt.

If it's 40 degrees and you are just using smoke tubes, no ice trays required.

Good question! What if it is colder? Getting tonthe point that 40’s is gone.

I jumped on the wagon on Saturday and gave this a shot. I used apple wood pellets. I hit a snag when after (i dont know how long) the smoke tube went out. .so I lit it, let it get good and smoldering like normal, set everything in the smoker, and left for about 90 minutes. My plan was 2 hours on smoke.

The tube was out when i got home, and din't look like it stayed lit for more than 20-30 minutes after i closed the cabinet. I guess there isn't enough air flow without the fan and stuff running to keep it going. So I relit it, and left the door slightly cracked, and timed out 2 hours.

I think it was to long, and everything smelled very harsh, but I wrapped in parchment for 48 hours since I forgot to vac-seal after 24.. . . but they're sealed and chillin now. I hope they mellow in a month or two.

Lots of lessons learned, so still a good experience so far.
