need help with heat control

I just got the 850ps2 and was checking it out today, when I had it set to 250 and waited a while I put the probes in to check hot spots. most places were with in 25 degrees of 250, but over the fire pot it was almost 400, what can I do so it don't get that hot in that area, thanks for your time!

Close the sear plate or make sure it's seated correctly
