No Smoke Taste

This is our first pellet fed cooking device - and I think it will be the last. Our Pit Boss PBV4PS2 Pro Series is a "cooker" not a "smoker". We have tried different pellets and reduced the starting temperature to give a longer time to get that smoky taste. Called Customer Service and they said reduce starting temperature, use Pit Boss charcoal pellets and get a smoke tube. We replaced an ancient Little Chief wood chip smoker with the Pit Boss and the Little Chief produced meat as smoky as you wanted - and we like it SMOKY. This Pit Boss could not produce "dark bark" on a brisket no matter what you did. The Pit Boss seems to control temperature and time correctly, but I can't see investing in smoke tubes and continuing to fuss around with this machine. VERY DISAPPOINTED. Will be looking for a wood chip real smoker.

Growing up in the South where people know good BBQ - the strong smoke flavor is what we have grown up with and what we are looking for. Don't think the Pit Boss will never be able to deliver that kind of flavor.

Are you comparing your "good BBQ" taste which was probably cooked on a stick burner to your results on a pellet smoker? You can't do that, they are 2 different things. I did my research before I got my 1600 and I knew when I bought it that it wasn't going to compare to a stick burner but with a smoke tube and cooking low and slow I've turned out some fantastic BBQ. The pellet smoker makes things easier that's the upside, it's not a stick burner that's the downside if you consider it that. Good luck, I hope you find what you're looking for.
 
I have the same smoker and love it. The wife doesn't like a heavy smoke flavor at all, says it's like licking the insides of the woodstove. Try a couple smoke tubes and hickory or oak pellets.
Same here. Wife & daughter both don't like the heavy smoke flavor. Now that I went to a pellet they are happy with the taste.
 
Interesting perspectives here with taste preferences.
I have a Brinkman that I previously smoked with using charcoal and wood. It produced a heavier smoke flavor especially with some hardwood tossed on to coals. I liked it. My wife didn’t.
Now I have the same Pit Boss model as mentioned above and am quite happy with what it does.
Our vertical Pit Boss has changed my wife’s mind on smoking. The last ribs I did were “the best I’ve ever had” so she said. She’s also sold on the Pit Boss smoked creamed cheese.
So will I ever use my Brinkman again for a smoke? Maybe, I got the cowboy steaks down pretty well on that device using indirect heat. But I’d like to give them a try on the Pit Boss as well.

I have the same smoker. It is a cooker, not a smoker. I'm trying to give it away. If you want to smoke meat of any type, use real wood chucks or logs. Wish I could get my money back.

Can’t produce a bark or Smokey flavor? A smoke tube is 20 bucks.

Get some 100% flavor wood pellets. Not the 100% hardwood pellets of whatever flavor. I like LumberJack 100% Hickory. Use the same in the smoke tube and you will start to get there. If you live near an Atwoods or Rural King they sell them reasonably priced. Dick's Sporting Goods are said to price match.
