You’ll get more lingering smoke because it has to travel further and you can add a damper on it.
Seen one awhile back where a guy did that and stuck out the window in his garage and put galvanized sides on it in his garage in the winter time
That way he could shut the garage door
He used metal flex hose
 
There is always smoke whether you see it or not. Heavy white smoke is not what you want. You want to see thin blue or none at all. This means a good hot fire that is burning the wood completely. Heavy white smoke can put an acrid taste on your food. A little is okay for a short period of time.
 
If I add one will I have to cover the other vents?
I just added a stacknto a 700. Loews has knock out plugs in the electrical isle that fit perfectly. As Cowboy says the stack cap acts as a damper. We adjust it down until wife's of smoke escape around the edges of the door, then open it a turn or two. We also put a piece of 3/16 plate under the grease plate slates to deflect the flame and moderate the hot spot directly over the burn pot. It is worth the cost (25 bucks).
