It's a regional thing, but here in our area pickled eggs are purple, as done in beets.I attempted this once with peeled hard boiled eggs, they turned out ok but a little dry. I just tented them with foil in my vertical smoker and only used a smoke tube. I was making pickled eggs and was just messing around. I pickeled them and people eat them .

Sure why not. Experimenting is fun stuff.Not bad...3+ Looks like its worth trying for sure.
