Smoked eggs

I attempted this once with peeled hard boiled eggs, they turned out ok but a little dry. I just tented them with foil in my vertical smoker and only used a smoke tube. I was making pickled eggs and was just messing around. I pickeled them and people eat them .

It's a regional thing, but here in our area pickled eggs are purple, as done in beets.
 
Did a batch of smoked eggs as per the pic. They got some color but there wasn't much smoky flavor to them. My wife made some egg salad out of them anyway and that was pretty tasty but we'll probably stick to the usual boiling method in the future.

I usually boil the eggs and take out of the shell. Then cold smoke (under 110° F) for a while, maybe an hour, depends on much smoke you want. I usually do a few extra eggs so I can taste along the way.
