First dish is complete.

Waiting on smoker to get to temp then wing time. Wanted to do a brisket but they banded together in protest said they waited a year for my wings lol.
They got madder when i said I made some a month ago and didn't share.

You need to give them a copy of the "Little Red Hen".

What do you use to crisp up the skin. Wings are my next project and was thinking to try baking powder trick.
 
I either deep fry or but them under the broiler with butter and Tabasco. The second way is my personal favorite and its good enough i don't care about crispy skin.
1 large bottle Tabasco
1 stick butter
1 tablespoon garlic
Heat to boil
Pour over wings
Bake at 425 till brown on top
Sprinkle dry ranch seasoning over and eat
 
Texas Twinkies!

Smoked some jalapenos yesterday (after cleaning them out), then smoked some cream cheese early this morning for two hours to mix with the filling that's going inside the jalapenos (cream cheese, Mexican cheese, crushed pineapple, and a little "Rib" seasoning). After stuffing the peppers, I wrapped them up with bacon on the outside, and set them on the Pit Boss smoker for around 90 minutes at 250 degrees. Lots of recipes on YouTube, and these were one of them. :p
