🔥 What's Smoking/Cooking on your Pit Boss?

Something else to this Steve. Depending on time I have I may let it sit in the stall for a while to collect more smoke time before I kick it up. I just run as low a P setting to keep it in that 200ish range. P1 works well to do drop some but might drop too P2 so I can drop temp quickly. I just try to stay in P0 or P1 as much as I can for the most smoke.

Looks delicious! I'll eat that right off the cutting board. Just curious, where can I get one of those combination knife/bottle opener/poke it and flip it tools?
If your fire is really hot. The flipper turner hook is longer so you keep some hair on your arms. LoL

Pork butt on the Platinum 1250. Got 10 hours out of my 24" smoke tube by tamping down the pellets when loading it. Really impressed with this Platinum 1250. Throws a lot of smoke. No temp swings. App and wifi working great.
Roast turned out great. Ate some and vacuum sealed and froze the rest.
