Busy weekend for me
30 lbs summer sausage
26 lbs brats
20 lbs snack sticks 5-20 cook 3.webp5-20 cook 2.webp5-20 cook 1.webp
15 lbs Italian sausage
15 lbs german sausage
10 lbs texas hot gut
10 lbs chrizo
7 lbs jerkey (i'll smoke it tonight)
 
Breakfast Fattys this morning. Layer of bacon, layer of sausage, then eggs,cheese,onions,and peppers all rolled up and hit with a little Kosmos Q Honey killer bee on the outside. It's on the 1600 at 250 until it's done. I'm thinking about 2.5 hours.

It took 2 hours 45 minutes to cook. I ran the temp at 400 for the last 15 minutes to crisp up the bacon a bit more. It came out fantastic!
 
July 4th weekend was a washout for us. Rained all weekend so nothing on the smoker. However, I did find a few minutes to use the Charbroil gas grill. It's one of those "infrared" grills (probably a gimmick but I like it). The grates sit on a rack so you can't see the flame and nothing fall down into the grill. So I threw on some Charcoal blend pellets on top of it and once they started smoking I threw on some hotdogs. They don't take very long but they did have a slight taste of charcoal on them.
