🔥 What's Smoking/Cooking on your Pit Boss?

Ribs for the 4th. Didn't get a done pic but they were great.

July 4th weekend was a washout for us. Rained all weekend so nothing on the smoker. However, I did find a few minutes to use the Charbroil gas grill. It's one of those "infrared" grills (probably a gimmick but I like it). The grates sit on a rack so you can't see the flame and nothing fall down into the grill. So I threw on some Charcoal blend pellets on top of it and once they started smoking I threw on some hotdogs. They don't take very long but they did have a slight taste of charcoal on them.
I have the same one. I love mine too! It does great indirect with wood chips to one side. When I cook on it that is... ;)
 
After a few mods and using a smoke tube charged twice for a good 6 to 7 hrs of pb comp pellet smoke . A 14 hr cook of a 17lb brisket. 225 till the stall at 155 @ 9hrs wrapped and pulled at 205. It was the best brisket I've done in 10 years. It was a long nite though lol

Bone-in chicken breasts (on sale for $1/pound)
Wife says, "the most juicy chicken breasts I've ever had"

Olive Oil binder, "Kick'nChicken" spice a little over two and a half hours at 200, then 300 for about 40 minutes on Pit Boss 1100 combo grill using apple pellets, and same pellets in smoke tube.

Smoker has problems maintaining constant temperature.

I've read others have the same issues.

Ok so I gotta admit I haven't used either Pit Boss for about 2 weeks now (grill or vertical). One weekend we had a washout with storms. Then last weekend it got a 112 on Saturday and 106 on Sunday. The heat was unbearable!

Not to mention our AC unit stopped blowing cold last Friday! I told my wife to turn it off, let it rest and then back on in 5 minutes. I called the company that installed it (Carrier AC unit from 2018 so it is still new). I then called back home, she said after 5 minutes of rest it was blowing cold again. AC guy got to the house within the hour. He tested it and said the compressor is going bad and only operating at 3% power. Yikes! Luckily it is under warranty. Bad news, the part wasn't in stock so they had to order it (as of today, almost a week it still hasn't come in). He said it will eventually go out and that if it stops blowing cold to turn it off like we did before, let it rest 5 minutes then turn it back on. Luckily it hasn't gone out yet and still working but I hope that part comes in soon.

If it does go out I have a back-up unit. One of those portable AC's that you can roll around from room to room. I bought it a year or two ago for hurricane season. In 2018 when we got hit by Michael we were without power for about 4 weeks. So I picked up a portable unit to run on the generator.

Anyway, no weekend cooks for me the last couple of weeks. Normally I use the Pit Boss every weekend. Plus I am running out of ideas. My oldest daughter says she is tired of the same ole stuff.
 
Yeah it's been so hot the last two weekends that I haven't done any long cooks. 112 last weekend, was 105 yesterday. So I figured I would do steaks hot and fast on the gas grill.
