I have 2 slabs of ribs defrosting for a Friday cook. Going to prep a couple small meat loafs with different ingredients and do them at the same time. Never did a loaf. Was wondering what temp to take them to....

Ribs are going. When they come off im going to change pellets and do one of the meat loafs, then change pellets again and do the other. They are only about a pound each so they shouldnt take all that long. Picked up a 9.7lb pork butt that will go on about 6 a.m. tomorrow.
Gonna be cold tomorrow, 37° with wind chills upper 20s here in SW FL. Warming up to 68°.Hopefully, you won't be smoking in sub-zero temps!
