🔥 What's Smoking/Cooking on your Pit Boss?

Still have 2 turkey breasts, Mac and cheese, and cabbage to smoke.

Just put about 3 lbs of salmon fillets on, along with 2 wedges of blue cheese.

Bought some alder pellets to try for this.

Did a dry brine with kosher salt and brown sugar, the brine recipe called for coriander and bay leaves (I had neither). 45 min in the dry brine, then a rinse, pat dry, and on a rack in the fridge since yesterday evening.

Sprinkled lightly before smoking with garlic powder and Everglades fish and chicken.

Should be on maybe 2 - 3 hrs. at smoke or 150° ??

Damn that looks good! Never heard of Alder pellets. What are they like?
Not really sure if they're similar to any other type of wood.

The smoke is not strong, very mild, IMO.

The salmon turned out great and so did the blue cheese wedges.

I will try to remember to get a pic of those later, gonna make some blue cheese dressing.
