🔥 What's Smoking/Cooking on your Pit Boss?

Stay safe
Thanks. Amazing how much area these storms cover. The worst is west of us. We’re catching I guess what you’d call the outer bands. But that’s enough. Got limbs down now. Birmingham looks to be in the center. Seeing this so far north makes ya realize what Mike and crew went through. In a much younger nother lifetime I spent several years between Houston and Galveston. Teaches ya to respect ma nature !

I spent hurricane Carla in Galveston. My grandpa was a janitor at the elementary school. Was crazy.

Picrure this in your mind. A couple of dudes in Webster Tx near NASA. Hurricane headed straight into Galveston. Too close as it was. But HAD to see the storm surges on the beach. Galveston under evacuation. While the VW was rocking south on 45 we uh I mean they didn’t notice the lack of southbound traffic on 45 or how heavy the northbound traffic was. Was just gonna be way cool. Never seen anything like that before. Dave Mason and Frampton blasting through the rattly cheap plastic wedge speakers in the back seat. Eight track heaven. Finally got just almost in. And what??? Cops everywhere. No place for longhairs to be. Especially with that smelly smoke pouring out the windows. No AC. Smartest thing to do was take the hint beforehand. Everyone else was being directed to turn around and head north. The city was shut down. Who woulda thunk. The 45 minute down took nine hours to get back home. At least that's the way I heard it. 😎😳🎶😜

Yep, beef ribs for dinner....

Jerk chicken. First time ever smoking anything edible before. Walkerswood hot and spicy rub last night, total about 5 hours. Drying on rack now, looking up whether or not I should soak the hickory chips. Bummed I cannot find any pimento wood.

I plan on doing a pork butt. it is small - only about 6.5 lbs. but I want to do it long and low, over night. I was thinking to leave it on smoke(150-160) from about 9pm until the morning, then turn it to 225 til it hits the 'stall' or 165. wrap it, and leave it in the smoker til 205. then cooler it. Never done a pork butt outside a crock pot, so i am a bit nervous if it can take that long.

Please be careful to watch your pellets. The vortex from hell is famous for long cooks.

This happens where the pellets feeding into the auger create a sink hole or vortex in the hopper. I simply move the pellets around throughout the cook to make sure that the auger is being fed. I'm sure some of the geeks on here have a fix, but I haven't seen a reliable one yet.

I think I remember someone talking about a vibrating mechanism that would prevent this. Ok, I know what some of you are thinking already... ;)
