🔥 What's Smoking/Cooking on your Pit Boss?

First try at a tri-tip brisket style. Added a smoke tube for additional flavor. BM gourmet blend, good flavor. Had some issues with temp, but the family loved it.

Is there a method or recipe you follow? That looks simply amazing. I was going to look for a belly but didn't have time, since I had planned on brining it for ~5 days

I have a meat guy that raises his own pigs and just has the best belly. These were just short of 3 inches thick and he trims the fat layer off. Find a cure you like (this one was maple, but pepper is a favorite too) and cure until you get that pink tone all the way through. These I did for 12 days. Then it's very important to set in the fridge until it forms a pellicle which is when it starts to get a sticky coating and usually takes 24 hours or overnight. You simply set it on a rack over a pan. This part really helps the meat absorb the smoke.
Set your smoker low to about 165 or so and use a favorite wood. Apple, hickory, or maple work well, but choose your favorite. Get it to internal temp of 155 and let it rest for a day or 2 in the fridge before you slice. Then whenever you're ready slice it and cook it up. You'll never eat store bought bacon again.

Be advised that the 12 days was because of the 3 inch thickness which is a pretty good size. Two inches or less can be done in 7 to 8 days.
 
Doing a couple of neighbors a pork butt each, for helping saw up a huge branch that fell from my tree, it was an all day of a job, with a couple of chainsaws. Nice way of saying "thank you", as well as supplying the beer for the day. Gonna throw a chicken on later, for my family.

Courtesy of howtobbqright, here's my jalapeno stuffed bacon wrapped chicken thighs, along with a side of smoked small potatoes. Edit: for those that don't have the mini loaf pan, tying with butcher string works just as well to keep them together, though the bacon and/or chicken might come out a little tougher if you get the cook time wrong on tied ones. the butter and bacon fat bath seems to keep it more tender. obviously i had both to compare.
