šŸ”„ What's Smoking/Cooking on your Pit Boss?

Did my first overnight smoke and it turned out Amazing. Total cook time was 10 hours and rested for 7 hrs.

Gonna do some ribs today. Not sure what I want to do. Rub or no rub? Just plain ribs perhaps? Since Iā€™ll be using my vertical Copperhead I thought about hanging them and putting them on smoke with a smoke tube for a long cook. But I canā€™t find my meat hooks I assume they got lost when we moved to Michigan. I stopped by Ace and bought a couple of ā€œSā€ hooks and might try that. Will probably try hanging them for at least 3 hours perhaps more. Then wrap in foil for an hour or so and then unwrap and cook some more. Will hit YouTube and watch some videos for ideas.

Ended up using an apple rub. I have them hanging but not quite like I expected. I had to leave the bottom rack in for the smoke tube (Bear Mnt Oak). So the ribs actually touch the bottom rack. But they are hanging. The ā€œSā€ hook stands for ā€œsuckā€ because it did not work very well but I managed to get them to hang.

Iā€™m just gonna let them hang at least 3 hours. Spritzing didnā€™t even cross my mind until just now. Not even sure I have a spritz bottle. Iā€™m losing my touch after not using this from March until Sept! Getting rusty I guess! Will go in the house now and see if I can find a spritz bottle.
 
So far so good. Maybe one more hour on smoke setting. Temp holding steady around 140-145! Then Iā€™ll wrap and turn up to 225. Donā€™t want them done too soon. I know an hour at the end is a little much but I may go back down to the smoke setting since it doesnā€™t get past 150 degrees.

Found a spritz bottle and spritzing them about every 45 min with apple juice.

I normally do two racks but since itā€™s just the 3 of us here one rack is enough. If I did two I was gonna do one with rub and one with nothing.
