I just purchased a pro series 1600.
I am going to smoke/cook a turkey . I bought the kit to brine.
My question is,do I put it directly on the grill? Put a pan underneath?
And the biggie for me! How dose the grease get to the grease pot?
I don't see any channels.
Any advice is greatly appreciated

I guess I will be doing this without Bluetooth.

My turkey had a terrible accident at some point before purchase.
We will see that happens

1.5 hrs of smoke at 225*f.
Now finish at 325*f
My understanding is poultry eats smoke.
There is so much information and it doesn't seam to be consistent.
I am glad to be a part of this community.
