🔥 What's Smoking/Cooking on your Pit Boss?

Here's my Christmas brisket i know not the best picture...but I wasn't very happy with the cook...the flavor was ok and I had it smoking at 195 for a good 8 hrs...but then i bumped up the temp to 250 before going to bed...I think maybe i should have done 225 instead as it ended up cooking way to fast and at 330am im being woke up by my temp alarm that its already at 203 and in some places higher...was hoping it would cook till at least 6 or 7 am....I gave it a good long rest and then warmed it up when we decided to eat. Results could have been worse i guess...at least i woke up to save it lol.

Pics from my first cook of 3-2-1 ribs. Had temp issues the entire cook and had to crank the heat up at the end to finish them off. Ended up pretty good just maybe slightly over. Flavor was good though. Going to try a beer can chicken today.

Had to push the beer can chicken cook a day back due to life, but firing it up for dinner today. Got an onion in the neck to prevent beer evaporating and a Fat Heads Bumbleberry in the butt. She barely fit in the Lexington. Thanks to Cowboy for the help on some questions I had. Lets see how she turns out in a couple hours.

It sounds crazy but I've never done a beer can chicken. I really need to. And @Cowboy1955 is usually one of the first to respond and always trying to help. Thanks cowboy.

When I came back from overseas I was 19 and I was stationed with the 25th Infantry Division on Oahu
my dad had fell dead at work so I was discharged with a honorable discharge so I could come home to see after my mom. I miss him everyday
 
So lesson learned, make sure your hopper is full, or at the very least feeding properly...had a flameout...but caught it pretty quick thanks to the meater. For those that flamed out during a cook, what's the best way to save the cook? Just prime until you get the fire back? Should you remove the meat until you get the heat going again and the initial burn is complete?

I’d pull it until you get it corrected
 
Turned out really well. Besides my poor carving job, you can tell the family hated it. Fat Head's Bumbleberry worked out really good for a beer choice.

Was also cool to make a mistake and not torch the entire cook. Lesson learned for next time.
