4.5 hours inI'm doing a 14.5 lb brisket today. I'm going to start it at 6pm tonight and pull it when it's done tomorrow morning (i will be up all night monitoring). It will be going in the vertical after that to rest at 160, until mid afternoon. I'm going to use SPG and run it around 250 with Bear mountain hickory. It’s a nice treat. My wife comes up with different twists for toppings then I smoke them.Looks like a winner. Making me hungry. Never tried the smoked cream cheese.

So It ended up resting for 9.5 hours at 160 degrees. It ended up so moist and tender and I didn't have to worry about the timing for when it would finish.4.5 hours inView attachment 2677
They look great!3rd cook on the PB. Did chicken legs with Kenny's chicken rub. Thighs marinated in a Bourbon marinade and my rub. Came out fantastic!
My wife said I should have done a better job with the photos. Oh well, next time.They look great!

My brother purchased that brisket at Sam's club. It was 14.5 lbs I think and was like $58 for a prime,pretty good price.
